Waiting for water to boil and keeping the typical home water heater at a constant temperature is expensive and time consuming.

Depending upon volume one is fermenting a common trick is to only heat up 1/2 of the projected volume , mix the sugar and tea, and then to cool down with cold water from the (filtered) faucet. . A few kombucha brewers are using the typical On-Demand water heaters which are less expensive than a brewery's Hot Liquor Tank (HLT) , HOWEVER many food inspectors and state regulations require the tea to be in Boiling Water and where the On-Demand Tanks only go to about 160F .
