We feel the Dried Grains that are promoted by this book (and other companies) are not as good or as healthy as real LIVE Kefir Grains. These dried grains do not grow and multiply. They are "neutered" in a sense and although they do consistently and reliably continue to produce Kefir, and they are more convenient and do not require straing to remove the live grains, they diminish quickly over a few cycles leaving the customer having to continuously buy more packages.
